Here are some of my family's favorites for quick, easy dinner recipes.
1. Nachos.
This meal ranks right behind pizza night in our house. And while there
is a fair amount of chopping and cutting to get this recipe ready (the
whole family pitches in, though), once the cutting is done, supper is
on the table! So I definitely consider it amongst my favorites for quick, easy dinner recipes.
Nothing complicated here.
- Brown hamburger and season with your favorite seasonings or toss in part of a packet of a purchased taco seasoning mix.
- Or, if you prefer, heat and season diced, frozen, cooked chicken. While the meat's cooking, chop up the
veggies of your choice. We like bell peppers, onions (okay, the parents
like the onions), tomatoes, lettuce, black olives and a can of no-fat
refried beans, warmed through. Add pre-shredded cheese and a dollop of
no-fat sour cream (and my husband adds salsa) and you're ready for a
bag of tortilla chips. Sounds like movie night at our home!
2. Tomato soup.
This simple recipe is a lot of fun. I open a can of diced tomatoes and add a
seasoning packet I make myself. Heat through and serve. This is one of my quick, easy dinner recipes that only takes about five
minutes. And that's going slowly.
Ah. The seasoning packet.
- Combine a dry veggie soup mix with...
- a bit of lemonade powder with sugar
- chicken bouillon granules
- dried minced onion or onion powder
- ground pepper
(Add these ingredients according to your own personal taste. Once you
get it the way you like it, write it down and make this in bulk. Store
in your freezer.)
This recipe is not original with me, but I don't know the author, so I can't acknowledge her (or him!).
Add garlic bread or grilled cheese to round out this super recipe for a quick and easy dinner.

3. Quick, easy dinner recipes featuring meatballs.
Make meatballs ahead of time (including browning them) and freeze.
While cooking, season the meatballs the way your family enjoys them...mesquite, bbq,
teriyaki, etc. When ready to eat, pop meatballs into a casserole dish
and cover with a premade jar of sauce of your
choice. Heat and serve. Quick and easy!
Creative tip - use your favorite ground meat. Beef, turkey, venison - all work well for this. Saving money on my grocery bill is important to me, so I like to look for ground turkey, often a better deal than other cuts of meat.
4. Chicken soup with bread bowls.
The bread bowls are NOT quick, although they are easy. A friend of mine
recommended using frozen bread dough, letting it thaw slightly (so you
can cut it apart into fist-sized chunks), let it rise and bake. Do this
some evening while watching TV. It's not much work; just takes time.
The following evening, when you are searching through your quick, easy dinner recipes, remember your bread bowls are waiting for you! Simply cut the tops off your bread bowls, carefully
tear out the inside bread (don't make your bowl too thin-walled) and
save the bread pieces for dipping. Put your favorite heat-and-eat soup
into the bowls and serve. My kids love this (okay, everybody in my
family loves this!).
5. Tuna salad.
My youngest loves tuna salad. We do not get exotic with this dinner classic. If
you boil your eggs ahead of time this quick, easy dinner recipe assembles
in a snap. A little mayo or dressing, a bit of pickle relish, a squirt of
mustard and you're in business. You can easily customize this for your
family's tastes by adding cheese, onion or corn. Be creative! Serve on
open-faced toast or with crackers.
Always remember...the best tip for quick, easy dinner recipes is to do as much of the prep work ahead of time
as possible. You can do this once a week for the whole week if you plan
out your menu. You can't believe how much quicker and easier your time
in the kitchen will go if you plan and prep ahead of time. Maybe, what you really need is to let someone else plan your weekly dinner menus for you. You can't believe what a time-saver this idea is until you try it.
